The Dexter Russell Basic Fillet Knife is a very long and flexible boning knife that is used to fillet or prepare fish. Blades are longer and more flexible than traditional boning knives so that they move easily along the backbone and ribs and under the skin of fish. These Basic Fillet Knives have handle grips made of White Polypropylene.
