The Dexter Russel serrated blades have a wavy, scalloped or saw-like edge. Serrations make the blade ideal for cutting things that are hard on the outside and soft on the inside ( bread, tomatoes) that might otherwise be ruined with a plain, flat ground edge. They are particularly good on fibrous foods. The serrated edges cut much better than plain edges when dull because the tips of the serrations prevent the remainder of the blade edge from contacting the cutting surface. Because of this, they may go longer between sharpenings. Various serration patterns are often used to improve the cutting ability of less-expensive, soft stainless alloys.
